I'm thinking about purchasing a server and the only thing that's stoping me is, if I don't buy HLStatsX right now, will I be able to upgrade my server with it later if I decide I want the stats?

Sure, you can add HLStatsX at any time to your account. You can upgrade or downgrade any part of your account at any time.
